Should You Avoid Eating Burnt Food?

Dark toast, chips, and biscuits can contain the chemical acrylamide. It can form when some plant foods are cooked at high temperatures. Frying, roasting, and baking can make more of it. Boiling and steaming usually make little or none.
Scientists found that high doses caused cancer in animals. But researchers do not yet know clearly how much risk acrylamide in normal food creates for people. Human studies have given mixed answers.
So one burnt meal is not a reason to panic. The US Food and Drug Administration says people do not need to stop eating baked, roasted, or fried foods. Eating a varied, healthy diet matters. If you cook potatoes or toast, a lighter golden color can help lower acrylamide.
